Error coins are, more or less, mistakes made by the mint before or during the striking of a coin. They may be minor or major, but it is generally agreed that anything that happens after the coin is struck is considered damage.
Varieties are generally considered things that happened to the die that makes coins, which are then transferred to all coins made by that die. Most common varieties are doubled dies and repunched mint marks.
